I've use OpenOffice for book layout and it seems to work well enough. I wasn't prepared for how much there is to learn about layout and editing though. Styles, tables of contents, orphan and widow paragraphs, etc. I can see why there are professional editors for this kind of thing. For wrapping text...

Under the Berne Convention your work is copyrighted as soon as you've written it. You don't have to do anything more and the risk of having work stolen by a publisher is practically zero. It goes in the same folder as the video file. So you might have something like this:

Video.avi
Video.ass


When you play the avi file, MPC or VLC (and maybe other video players too) will detect the subtitle file and display it.
